Recipe: Sweet curd dumplings with nougat and apricot sauce

South Tyrol’s most important export product – wrapped in a hearty and sweet batter! Apple fritters are a very popular dish to be tried at the traditional summer fairs – and they make an excellent finale for a typical South Tyrolean dinner! Find out for yourself! Thanks to private host Erna Pernthaler from the Guesthouse Prader for cooking together.

Apple fritters

Ingredients:
2 juicy medium-sized apples
the juice of half a lemon
125 g flour
125 ml milk
2 egg yolks
½ packet of vanilla sugar
1 tablespoon oil or rhum
2 egg whites
1 pinch salt
1 tablespoon sugar
cooking fat
3 tablespoons sugar or icing sugar
1 tablespoon cinnamon for dusting

Preparation:
Peel the apples, core them and cut them into slices (approx. 1 inch). Sprinkle with lemon juice and leave for about 10 minutes. Put the flour in a mixing bowl, add the milk and stir into a smooth batter. Add the egg yolks, vanilla sugar and oil (or rhum). Whip the egg whites with the salt and sugar until they are stiff and slowly mix into the batter. Use a fork to dip the apple slices in the batter, then fry them in the hot fat at 180 degrees Celsius until they are golden. Mix the sugar or icing sugar with the cinnamon and roll the apple fritters in the mix.
